I have been doing my best to eat low carb, but here’s the thing. I make awesome oven roasted marinara sauce. The tupperware in the back of this pic is just that. It was in my freezer whispering to me that it was there. I have been trying to think of what I could make to have it with. That container is usually the perfect amount for eggplant parm, a recipe that is also killer. But I didn’t want to have to add in all the carbs from the breading, even if I do bake the eggplant instead of frying it. Instead, I invented this recipe. It was meant to go over zoodles. I now have some, so I’ll saute them tomorrow night and have them with some of this, but for now, here is this recipe…
Ingredients
- Marinara – The recipe I use is this. I add a couple of jalapeños. You can also use your favorite jarred sauce, just check sugars/carbs, if you’re watching that.
- 2 Eggplants – peeled and cut into bite-sized chunks
- 1 orange bell pepper – cleaned out and diced – any color will do, but add some color
- 1 container sliced shitake mushrooms
- 1 package baby spinach
- 1 package chicken andouille sausage – sliced – if you don’t like spice, use a mild one
- 1 lbs large shrimp – detailed and cut
- 2 zucchinis – peeled and diced – unless putting over zoodles
- Flaky pecorino cheese – optional, for topping
Instructions
- Put some olive oil in a large pan over medium heat.
- Sautee mushrooms and pepper until browned a bit.
- Add chicken sausage and brown.
- Add in bag of spinach and cover pot with lid for 2-3 minutes. Turn over and wilt.
- Add in zucchini (if adding) and eggplant. Cover for another 3-5 min, until veggies are all tender.
- Add shrimp, and mix well.
- Add sauce. The container I had was too much, so add some, mix and then add more if needed. Cover and cook for 5 more min.
- Serve on top of zoodles, pasta, or just have as is. Top with pecorino, parmesan, some basil, or anything that makes you happy.
Not every meal I make hits it out of the park, but my sauce tastes good no matter what I make with it, so this was pretty good. Hope it gives people a meal idea.
